  1. Preheat oven to 350 °F.
  2. Whisk together butter and brown sugar in medium bowl until combined.
  3. Add eggs, vanilla, corn syrup, corn starch and bourbon. Blend well.
  4. Place pecans evenly in bottom of the unbaked pie crust. Pour pie mixture over the pecans. Place a pie crust protector over the edges of the pie.
  5. Bake at for 55 to 60 minutes or until center appears barely set. About 5-8 minutes before the pie is done, remove the pie crust protector and brush with an egg wash.
  6. Cool to room temperature on wire rack. Optional: Brush more bourbon over the top of the pie when it's fresh out of the oven.
