Mix the Dry Ingredients:
In a medium bowl, whisk together 2 cups all-purpose flour, 2 teaspoons baking powder, and 1/2 teaspoon salt. Set it aside.
Mix the Wet Ingredients:
In a large mixing bowl, use an electric hand mixer to cream together 1 stick of softened unsalted butter and 1 ½ cups granulated sugar until light and fluffy. This usually takes about 3-4 minutes on medium-high speed.
Beat in 3 eggs, one at a time on LOW speed, until well combined.
Mix in 1/3 cup fresh lime juice, 4 Tablespoons tequila, and the zest of 2 limes until incorporated.
Combine Wet & Dry:
Gradually add the dry ingredients to the wet ingredients, alternating with 1 cup sour cream (room temperature). Remember to always start and end with the dry ingredients and have your mixer on LOW speed.
