How to Make a Strawberry Crunch Cheesecake Cake

Bake the Strawberry Cake Layers:
Preheat your oven to 350°F (175°C).
Use my Easy Cake Pan Release recipe to grease two 8-inch round cake pans. I like lining the bottoms with pre-cut parchment paper circles too.
Prepare a strawberry box cake mix according to the package instructions, replacing the water with equal parts milk. Betty Crocker Super Moist Strawberry Cake Mix is my fav!
For extra moisture and flavor add a 3.4 oz box of vanilla instant pudding and a teaspoon of vanilla extract to the batter.

Divide the batter evenly between the prepared pans and bake as directed on the box or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Prepare the Cheesecake Layer:
Reduce the oven temperature to 325°F (165°C).
In a large bowl, beat the softened cream cheese and sugar with an electric hand mixer until smooth. This should take about 2-3 minutes on medium-high.
Add eggs, one at a time, fully incorporating each before adding the next. Blend in salt, vanilla, and sour cream until just incorporated.
Pour the mixture into a greased 8-inch round cake pan (lined with a parchment paper circle) and bake for 45-55 minutes, or until set and the center is slightly jiggly. Cool completely, then refrigerate for at least 4 hours, or overnight.

Assemble the Cake:
Place one strawberry cake layer on a serving plate or cake board. Spread a thin layer of my Fluffy Vanilla Buttercream over it.
Carefully place the cheesecake layer on top, then another layer of frosting.
Top with the second strawberry cake layer. Using an offset spatula, frost the top and sides of the cake with the remaining frosting.
Over a sheet pan, use your hands to scoop the Strawberry Crunch Topping and apply to the sides and top of the cake. This part can get a little messy!
Decorate the top with more buttercream, and a sprinkle of strawberry crunch. Let the cake chill for at least an hour before serving; this makes it easier to slice. Enjoy!
