  • Wash & dry, hull & slice 2 cups of fresh strawberries. In a saucepan, combine sliced strawberries with 1/4 cup sugar, and 1 Tablespoon lemon juice. Cook over medium heat until the strawberries break down and the mixture thickens, stirring occasionally.

  • Allow the filling to cool completely.

  • Optional: Mash the strawberries with a potato masher for a smoother textured filling.

  • Crumb Coat & Frost: To prevent crumbs from escaping, apply a thin layer of buttercream all over the cake. For added stability, refrigerate for approximately 10 minutes before frosting the cake with the remaining Champagne Buttercream.
