Pour 1 cup of your favorite pink champagne into a small saucepan. Bring to a light boil, then simmer over medium heat until it reduces to about 1/2 cup. This usually takes me about 10 minutes.
Allow the reduced champagne to cool before incorporating it into your cake batter.
Prepare the Strawberry Filling:
Wash & dry, hull & slice 2 cups of fresh strawberries. In a saucepan, combine sliced strawberries with 1/4 cup sugar, and 1 Tablespoon lemon juice. Cook over medium heat until the strawberries break down and the mixture thickens, stirring occasionally.
Allow the filling to cool completely.
Optional: Mash the strawberries with a potato masher for a smoother textured filling.
Make the Pink Champagne Cake:
Preheat your oven according to the cake mix instructions.
In a mixing bowl, use an electric hand mixer to blend together the cake mix, a 3.4oz box vanilla instant pudding, 1/2 cup cooled champagne reduction, 1/2 cup whole milk, 1/3 - 1/2 cup vegetable oil (follow cake mix instructions), and 3 eggs until smooth.
